Pav Bhaji

Ingredients:

3 Potatoes

2 Medium size tomatoes

2 Carrots

Cauliflower

1 Small bowl Peas

2 Chopped Onions

1 tspoon ginger garlic paste

1 tspoon chilli powder

½ tspoon turmeric powder

2 tspoon Pav Bhaji Masala

Coriander-Cumin seeds powder (Dhania - Jeera Powder)

Salt to taste

Oil

Pav /Pao (As per requirement)

Butter, Lemon, finely chopped onion & chopped coriander for serving.


Procedure:

For Bhaji:

Steam all the veggies, Mash them and keep aside.

Heat Oil in a Pan, Add chopped onions to it & fry till translucent.

Add chopped tomatoes, salt and other powders to it & fry till oil floats on top.

Now add the mashed vegetables. Mix well adding 1 cup water to it.

Let it cook to boiling consistency.

Add chopped coriander to it. Bhaji is ready to serve.


For the Pav/Pao:

Slit open the pavs from the middle.

Apply butter inside & place them on a pre-heated frying pan.

When they get golden brown from the inside take them off.

Serve hot with Bhaji garnished with coriander, butter & pieces of lemon. (As shown in the pic)

Mushroom Penne Pasta in white sauce

Ingredients:
1/2 Packet Penne pasta,
1 small bowl button mushrooms
Oregano to taste
Red chilly flakes
Oil
1-2 Veg maggie cubes
Water
For White sauce:
2-3 t-spoon of Maida
3/4th Cup milk
1 tablespoon Butter
Salt to taste
1/4th t-spoon sugar

Procedure:

For White sauce:
In a pan melt butter & mix it with maida fry for a while.
Add milk to it and stir so that no lumps are formed & the paste becomes smooth.
Add salt to taste & a pinch off sugar.
Now keep it aside.

Preparation of Pasta:
Keep water to boil in a vessel.
Once it starts boiling add pasta to it and let it cook for 8-10 minutes.
Add 3-4 drops of oil to it so that the pasta do not stick once cooked.
Add 1 tspoon salt too.
Once boiled drain the water and keep it aside.

Now in a pan put 1 tspoon oil.
Add chopped mushrooms,oregano & a veg maggie cube to it.
Put salt to taste.
Fry it till the mushrooms are cooked properly.
Add this mixture to the cooked pasta kept aside and mix well.

Now in a serving bowl put the mushroom & pasta mixture.
Pour the white sauce over it and mix well.
Garnish with chilly flakes and serve hot Mushroom Penne pasta with white sauce..




Sweet Corn Bhel


Ingredients:
2 bowls boiled sweetcorn
1 chopped onion
1 chopped tomatoes
1/2 t spoon chat masala
2 table spoon tamarind pulp
Joggery to taste
Salt to taste
Chopped coriander
Sev for garnishing

Procedure:
Mix sweet corn with chopped onion,tomato,tamarind pulp, joggery & Chat masala.
Add salt to taste.
Add finely chopped coriander to it and garnish it with sev & Onion rings.

Tasty & nutritious sweet corn bhel is ready to serve..:)



Chocolate Fudge


Ingredients:
2 Packets of Marie Biscuit crushed
3-4 Eggs
Powdered sugar as per required sweetness
10-12 t-spoon drinking chocolate powder
1 t-spoon Vanilla Essence
Butter for greasing.

Procedure:
Mix crushed biscuits,powdered sugar & drinking chocolate in a bowl.
Add eggs to this mixture and mix it till it becomes a soft dough.
Put Vanilla essence to it.
Now spread it in a butter greased tray and let it set overnight in the fridge.
Cut it into cubes and decorate with Cashew Halves.

Yummy Chocolate fudge is ready to serve..!!
